The default To-do statuses are Open and Done. However, if you want to add more statuses to customize your workflow, you can do it from Settings -->To-do Settings.
Examples of To-do statuses are On hold, Ready for the reviewer, stuck due to client, etc.
You can't remove the default statuses 'Open' and 'Done,' but you can rename and change the color.
